Spicy Vegetable Soup
1 lb ground beef (or turkey)
1 cup onion, chopped
2 garlic cloves, chopped
1 handfull chopped celery leaves or 1 tsp celery salt
30 oz chunky spaghetti sauce (I use one that has mushrooms and green peppers)
10 oz beef broth
2 cups water
1 tsp sugar
1 tsp salt
1/2 tsp ground pepper
1 (10 oz) can RoTel diced tomatoes and green chilies
1 2lb bag frozen mixed vegetables (you can use less if you don’t like as many vegetables)
2 cans cube cut potatoes
~Cook hamburger in onion and garlic.
~Drain and set aside
~In large soup/stock pot – add remaining ingredients except vegetables & potatoes
~Add hamburger
~Allow to cook for 2 hours
~Add frozen vegetables and canned potatoes
~Allow to cook 30-45 minutes more
~Serve with rolls or french bread
